What's Included?

The Food & Climate Foundations course is an introductory primer for food and nutrition professionals who want to elevate their understanding of the food, health, and climate nexus, and identify opportunities to engage politically and personally. Each module is 60 minutes in length, with 15 minutes for live Q/A (i.e. 45 minutes for presenting material). Each module is accompanied with educational resources and optional assignments that encourage application of the learning objectives. Modules are recorded, sent to all attendees from the live event, and available for evergreen purchase on the PHC website. The course is also eligible for CEUs through the Academy of Nutrition and Dietetics.

Module Breakdown

Module 1:

Objectives

  • Outline how food, climate, and human health influence one another
  • Describe key global targets and regional nuance that optimize food, climate, and health
  • Acknowledge prior/existing cultures where these concepts originated

Module 2:

Objectives

  • Describe the role of policy in dictating the environmental impact of our food and farming systems
  • Explain major pieces of federal food and farming policy
  • Articulate the interplay between federal, state, and local policy Summarize common advocacy tools and strategies

Module 3:

Objectives

  • Describe how to leverage purchasing power to improve overall health, safety, security, and sustainability of our food supply.
  • Promote flavor-focused menus while implementing principles of healthy and sustainable dining.
  • Strategize new approaches and enhance current practices in food waste reduction, from data analysis and procurement to portion control.

Module 4:

Objectives

  • Examine what front of package food labeling is and its scope in the U.S.
  • Discover the overall authority of major U.S. regulatory agencies in relation to food labeling
  • Evaluate various sustainability labeling claims and learn how to recognize them on food packaging
  • Recognize popular food marketing and sustainability terms used by CPG food and beverage brands
  • Learn how to differentiate Marketing tools and sustainability claims from regulated claims and third-party certifications
